Another important Mediterranean food is bread. Think of Italian focaccia, the light, airy bread that is often topped off with oil and herbs, or Greek flatbread pita which is just as popular in the Middle East, but with a more dense, less fluffy texture.

Although the topping of crispy fried onions is optional, it adds a great crunch to this dish. In some Mediterranean countries, it is considered a top Mediterranean appetizer.
